Junshan Yinzhen is rare and consists of buds or silver needles of the unopened shoots. The tea leaves are grown on Monarch Mountain in Yueyang in Hunan Province. By yellowing the leaves in piles, the aromas infuse deeply into the leaves as they are completely dried. All the buds are silky smooth when dry and almost shimmer with their small hairy covering. Junshan has a unique flavor that is slightly nutty with hints of sweetness yet there is also a subtle woody, smoky taste. Junshan Yinzhen is a specialty tea that is a good alternative to its cousin, the more common Baihao Yinzhen white tea. Use about one tablespoon or more (3-4 grams) and steep for two minutes with water about 180 degrees. Leaves can be steeped up to three times.
