The crab mushroom and eryngii mushroom from Shanghai Finc Bio-tech Inc. has been certified as safe and healthy agricultural products by Shanghai Quality Certificate Center of Agricultural Products on the basis of standard requirements in 2002. Shanghai Finc Bio-tech Inc. was initially established in 2001 as a center utilizing and developing the academic achievement of mushroom rooting in Edible Fungi Institute, Shanghai Academy of Agricultural Sciences. Finc, located at Shanghai Fengxian Modern Agricultural Area, currently produces more than 4500 kilograms of specialty mushroom each day, more than any other mushroom farm in China. The domestically most advanced facilities and computer-controlled growing environments in Finc help to maintain quality and consistent production of Finc specialty mushrooms. Shanghai Academy of Agricultural Sciences has participated in the establishment of production facilities for several types of mushroom in Finc. Our diverse team, consisting experts specializing in mycology, multi-discipline engineering and international marketing, is leading the development and production on specialty mushroom in China.

Potential hazards associated with mushroom and measures to control those hazards are identified. The hazard could be biological, such as microbe; chemical, such as a toxin; or physical, such as ground glass or metal fragments. We have established procedures to monitor the critical control points, corrective actions and effective recordkeeping to document the HACCP system.

Finc was originated in a high-tech achievement conversion project of Shanghai and funded by a project from National Comprehensive Development Committee on Agriculture. Finc Mushroom Farm has invested 35 millions of RMB to build research facilities and expand production capabilities and produced approximately 2000 tons specialty mushroom a year.

Crab mushroom, or beech mushroom (Hypsizygus marmoreus) has a mild, nutty flavor and keep its shape and texture nicely when cooked. Crab mushroom is a new species of mushroom that tastes like crab and concentrated extracts have shown a strong inhibition ratio for the solid Sarcoma 180 cancer cells and also for tumour metastasis in mice. Studies have shown that when mice were fed on a normal diet plus 5% dried fruit-bodies of crab mushroom they displayed strong cancer prevention ability. So Crab is a relatively new edible medicinal mushroom now popular in East Asia.

Eryngii mushroom, king oyster, royal trumpet (Pleurotus eryngii) is best known medically for their cardiovascular and cholesterol-controlling benefits. Eryngii mushroom contains mevinolin and related compounds which are potent competitive inhivitors of HMG CoA reductase, the major rate limiting enzyme in cholesterol biosynthesis. In addition, the mushroom has been shown to have activity in the following: antitumor, immune response, anti-inflammoatory, antiviral, and antibiotic.
